Senegalia Pennata is a well-loved herb among Thais and Cambodians. When it’s cooked up, it’s so tasty.
The popular way to cook it with beaten eggs to make an omelette, which is then cut into squares and serve with hot chilli shrimp paste sauce.

- Okras, garlic, chilli, lemon juice
- Shrimp paste
- Palm sugar, fish sauce
- Egg, Senegalia Pennata
Boil water and put okras in for a few seconds to be cooked. Then soak them in the cold water.
Pound garlic and chillies in a mortar until finely chopped.
Then pack shrimp paste in the banana leave and fry it until cooked. After that, pound it with the previous ingredients above.
Add palm sugar, fish sauce and half of the lemon juice based on your favourite. And place the sauce in a bowl, add more chillies if necessary.
Crack 3 or 4 eggs in a bowl and beat them. Add fish sauce and senegalia pennata and mix them together again until good blend.
Heat the cooking oil in a pan. Pour the egg mixture and fry it for 2 minutes.
After cooked, transfer it onto cutting board and slide into square slices. Then transfer to the plate.
Finally, you can serve the omelette with hot shrimp past sauce alongside cooked and fresh vegetables. Please enjoy!!
